Meatless Monday Featured Blogger & BBQ Marinated Tofu

For some meatless meals this week, I made a super simple batch of barbecue marinated tofu. I did a ton of walking on Sunday to and from Union Square for the Eat Boutique pop-up shop at Fringe Union. I went home with the BBQ sauce made by We Love Jam. Fresh, complex, delicious, and gluten free!

I decided to mix up my tofu butchery and do triangles instead of cubes. I’m just crazy like that. I served the BBQ tofu over rice for a quick dinner, and on top of a quinoa & romaine salad for lunch.


BBQ Marinated Baked Tofu
serves 4

  • 1 package extra-firm tofu
  • 1 cup favorite BBQ sauce

Drain the tofu and wrap in a paper towel to soak up the extra water. Let sit for at least 5 minutes.

Cut the block of tofu into cubes, triangles, strips, or planks. Add to a zip top bag and mix with the BBQ sauce. Let marinate for at least 2 hours, preferably overnight.

Preheat the oven to 375 degrees. Line a baking sheet with aluminum foil and spray with olive oil (like with a Misto) to prevent sticking. Arrange your tofu in one layer. Bake for about 30 minutes.
